Toast. So hot right now. Seriously, there’s like toast restaurants and stuff! I’ve seen at least a couple of articles on toast in the past several months. And after eating this bomb-a$$ toast I totally get it. This toast is so simple and I definitely didn’t invent this concept, but I want to eat it every day forever and ever amen please.
There’s not a lot to say about this, but there a couple elements that make this recipe. You should start with a nice, hearty bread. Wonderbread probably isn’t going to cut it here. I used a rye as that’s what we had on hand. I sliced fairly thick slices – maybe about an inch. Also, a ripe avocado also makes this process easier. My avocado(aka nature’s mayo) probably could have stood to ripen for one more day, but with enough smashing it came around and was still totally delicious. Finally, a fried egg totally brings this to next level awesome – so happy eggs are back in a major way. Remember when they were unhealthy?
Speaking of eggs, I really tried to take one of those sexy yolk pictures, but it was quite the fail. I think it’s a two person job. Next time I’ll enlist Dan. I will conquer the sexy yolk picture!!!
We had a taste of warm weather here in Minneapolis for a couple of days and it totally kicked me into healthy eating mode. Goodbye comfort foods and hello salads, smoothies, and now avocado toast! (Until it gets cold again and we have a blizzard in April or something – bound to happen) Obvi you can change this up – I totally forgot to add hot sauce to this and that would have been great. I bet sliced radishes would be good on this too for a nice crunch.
- 2 eggs
- 1 avocado
- 2 hearty slices of bread
- lemon slice
- salt & pepper
- Toast bread
- Cut open avocado, and smash onto bread. If your avocado isn’t so ripe then smash in a bowl with a little lemon juice in a bowl before putting on toast.
- Make fried or overeasy eggs - or whatever you like.
- Place egg on toast.
- Squeeze lemon juice over the whole dang thing and add a pinch of salt and a couple shakes of pepper.
