Holiday Bacon Brussels Sprouts
  • 1 pound Brussels sprouts - washed, trimmed and halved(quartered for the larger ones)
  • 1 medium onion - chopped
  • 1 large tart apple - cored and diced
  • 8 slices, turkey bacon - cooked and chopped
  • ¼ cup olive oil
  • 2 tablespoons maple syrup or honey
  • 1 tablespoon balsamic vinegar
  • ΒΌ cup chopped pecans
  • 1 TB butter
  1. Heat 1TB butter on med-high heat. Once butter is hot add onions to pan.
  2. Cook about 10 minutes, stirring frequently, until onions are close to caramelized.
  3. In bowl, coat brussels sprouts with olive oil. Add to hot pan. Stir occasionally.
  4. After about 5 minutes add the apple, vinegar, pecans, maple syrup and chopped bacon. Cook for another 4-5 minutes until ingredients are incorporated.
  5. Salt and pepper to taste.
