The traditional ‘grilling season’ may already be on it’s way out (though in Minnesota, I don’t quite know if that’s a thing), but appetizer season is in full swing (hello, football and holiday get togethers!). So I decided to take the grill and get appy or app happy or get appenin’ — whichever of my husband’s terrible puns you prefer..
This was a super easy, but impressive looking dish. You can use brie or camembert for this recipe. I honestly don’t know the difference between the two – I just buy whichever is cheaper. While I understand that not all cheeses are created equal, a grilled cheese is pretty great regardless of it’s heritage.
I served this on grilled baguette slices with peaches and basil. I think this would also be delicious (and potentially easier) with jam instead of the peaches. The basil added a nice freshness, but is totally optional. Basil can be pricey when it’s not in season, but the zestiness is sometimes worth the reminder of sunshine and warmer weather. This is an impressive and unique appetizer for guests; or you can have it with some wine and eat the whole dang thing for dinner like I did.

- 1 round brie or camembert
- 2 peaches, sliced
- 1 baguette, sliced
- Olive oil
- basil leaves (optional)
- Heat grill
- Grill baguette slices (brush with olive oil beforehand for extra yumminess)
- brush cheese with olive oil
- grill for two minutes on both sides on indirect heat
- Grill peaches(you can brush with olive oil if you’re worried about sticking)
- Stack brie, peach slice, basil leaf on baguette slice
- Sip wine
- Feel fancy and European
