This is one of my favorite desserts this summer. Creamy, fruity, and refreshing! And the best part: it takes five minutes to whip up and there’s only three ingredients, so this is about as easy as it gets!
And no, you aren’t going to mistake this for your pint of Ben & Jerry’s, but it is WAY healthier and satisfies a sweet tooth craving on hot summer days.😎☀️ You just need a blender of some sort – I’ve made smaller batches of this with an immersion blender, but I used my Ninja blender this time since I was using the whole bag of frozen mango.
Frozen fruit is such a time saver for recipes like this – and it’s pretty much as healthy as fresh fruit! I use it all the time(hello frozen strawberry margs!😜🍹). Of course it’s also great for responsible things like healthy smoothies and sauces☺️
In order to keep the calorie count down, I used a packet of splenda to sweeten this up. You could use a couple tablespoons of honey or 1/4 cup of regular white sugar. I am interested to try this with a little cayenne. I love mango in a sweet and spicy form. In the past I’ve topped with light whipped topping and it was reeeaaal good☺️
You can make this a little ahead of time. I made before dinner, threw it in the freezer, and then served it for dessert.
This serves about four.
Or two if you’re little piggies like Dan and I🙊🙊
- 1 bag frozen mango
- ½ - ¾ cup half and half
- 1 packet splenda
- In a hi-speed blender or large food processor, blend together half and half, frozen mango, and splenda until the texture of soft-serve ice cream. Scoop ice cream into serving dishes.
- Optional: top with whipped topping
